Description

Grape varieties: Grenache, Syrah and Carignan.

Soil: Schist soil.

Temperature / Cellaring: Best enjoyed for its fruitiness within the first three years; this wine will reach its full potential after a few years in the cellar. Between 5 and 10 years.

Serving temperature: 16–18°C.

Our tasting notes: A deep red colour verging on garnet. A powerful nose of concentrated ripe fruit, mocha and spices. The palate is round and elegant with hints of liquorice leading to a long, fresh and spicy finish.

Food and wine pairing suggestions: Grilled Aubrac rib of beef with herbs. Red meats, game and cheeses in general.

On the high karst plateau of Larzac, France’s largest causse where man has managed to remain unobtrusive, life is synonymous with the great outdoors. The numerous paths criss-crossing it, including the drailles (sheep tracks) carved out over time by transhumant herds, offer an extraordinary terrain for exploration where infinite possibilities and splendid solitude become synonymous with freedom. The mind is free to wander before these ruin-like rocks that dot these vast open spaces, where the ‘angel’s hair’ drifts in the breeze.
