Temperature / Cellaring: Best enjoyed young whilst the fruit is still fresh; this wine can be cellared for up to 3 years. Serve at 7–8°C.
Our tasting notes: Intense, brilliant straw-yellow colour. A refined, complex and distinguished nose with floral, spicy and citrus notes. Refined and elegant on the palate with a lovely, slightly toasty finish.
Food and wine pairing suggestions: Perfect with a monkfish stew in white wine, this wine pairs beautifully with all your fish in sauce, foie gras, confit poultry, pastries and aperitifs.
It was in the 20th century that Larzac forged its reputation as a land of struggle. Indeed, from the ‘Oath of the 103’ on 28 March 1972 to the events involving José Bové in 1999, this region naturally established itself as a legendary site of resistance against militarisation, colonialism and, more broadly, the established order – a struggle that would lead, a few years later, to what is now known as ‘anti-globalisation’, which manifested itself in places such as Davos and Seattle and continues to this day.
