Soil: Clay-limestone soil.

Temperature / Cellaring: Best enjoyed for its fruitiness within the first three years, this wine will reach its full potential after a few years in the cellar. Between 5 and 10 years.

Serving temperature: 16–18°C.

Our tasting notes: A crystal-clear, brilliant colour tending towards garnet with violet highlights. The nose, complex and balanced, combines spicy notes (cinnamon), undergrowth and morello cherry. On the palate, the wine is supple with silky tannins. The aromas linger for a long time with notes of garrigue and red fruits.

Food and wine pairing suggestions: Lamb stew with thyme, meat dishes in sauce, sheep’s milk brousse and other cheese platters.

On the Larzac plateau (600m–900m), nature expresses itself unrestrainedly, as if striving to refine a painting in the manner of an artist, where man has simply come to add a few touches of his own. The environment is harsh; the wind blows, the plains are arid, and the rain, quickly absorbed, has given rise to the area’s many lakes, sinkholes, gorges, underground passages, rivers and caves. Animals and plants are the true masters of these places where time seems to stand still.
