Colour: Red
Appellation: AOP Languedoc Saint-Saturnin
Wine name: Haut Vol
Grape variety(ies): Single-vineyard selection of Grenache, Syrah and Mourvèdre (aged in oak barrels).
Soil: Clay-limestone.
Serving temperature / Cellaring: Ready to drink whilst young, but can be kept for 10 to 15 years.
Our tasting notes: A garnet red colour. On the nose, complex notes of spices, liquorice and violet. A certain freshness emerges with aromas of eucalyptus and peppermint. The palate is full-bodied and generous, with silky tannins enveloping a long finish featuring notes of vanilla pod, ripe red fruits and black fruits.
Food and wine pairing suggestions: Woodcock tied with string, Tournedos Rossini, a thick cut of venison in Château Briand sauce.
This wine is the quintessence of the Saint-Saturnin appellation. A rigorous plot selection process ensures that only vintages possessing all the necessary organoleptic characteristics are chosen for the production of this iconic cuvée. Our winemakers have truly excelled here!
