Description

Grape varieties: Grenache, Syrah, Carignan and Cinsault.

Soil: Soil composed of rounded pebbles.

Temperature / ageing: Best enjoyed for its fruitiness within the first three years; this wine will reach its full potential after a few years, between 5 and 10 years. Serving temperature: 16–18°C.

Our tasting notes: Ruby colour with violet hues. Nose of violets, red fruits and garrigue spices. On the palate, it is full-bodied and true to the nose. Silky tannins dominate a mellow, balanced finish. 

Food and wine pairing suggestions: Rabbit with chanterelle mushrooms, osso bucco, grilled tuna fillet, stews, Saint Marcellin cheese and Salers beef.

If there is one region synonymous with authenticity, it is Larzac. Rural traditions and peasant customs remain deeply ingrained, alongside an architectural heritage featuring unspoilt villages straight out of the Templar era, such as La Couvertoirade, as well as the local cuisine and famous specialities like Roquefort, the importance of hunting, the exclusively artisanal way of life, the nature of the many festivities, or even the struggles and protests often tinged with Occitanism and symbols of local character and authenticity that have marked its recent history… These are all elements that contribute to building the myth of a land of true authenticity.
