Les Oiseaux de l'Aube (rosé)
“Nothing stands out in this terroir-driven rosé, which will suit whatever you fancy…”
Description
Grape varieties: Syrah, Grenache and Cinsault.
Soil: Clay-limestone soil.
Serving temperature / Cellaring: Best enjoyed young at 7–8°C; this wine can be cellared for one or two years.
Our tasting notes: Peach-coloured. An elegant nose of white flowers, red fruits, peach and citrus. On the palate, the attack is clean and a hint of sweet spice supports the suppleness of a wine that finishes with a skilful balance between roundness and freshness.
Food and wine pairing suggestions: Asian cuisine, cod brandade, young Cantal cheese, poultry and savoury tarts.
The birdsong rings out like a signal to all at the first and last glimmers of day. It is life that awakens and then fades away, ceaselessly. Inspired by a poem by the iconic Max Rouquette, ‘Les oiseaux de l’aube’ (The Birds of Dawn) highlights the fragility of this song of the Earth, ever ready to fall silent like a stone at the bottom of the water. This cuvée captures that elusive Nature, immortalised at its finest, fresh and fleeting.
