The Birds of Dawn (white)
“The richness of Grenache, the elegance of Marsanne and the freshness of Vermentino
come together in this gastronomic white wine, a speciality of the Languedoc…”
Description
Grape varieties: Grenache, Marsanne and Vermentino.
Soil: Clay-limestone soil.
Temperature / Cellaring: Best enjoyed young whilst the fruit is still fresh; this wine can be cellared for up to 3 years. Serve at 7–8°C.
Our tasting notes: A bright pale gold colour. The nose combines stone fruits, meadow flowers and a touch of minerality. On the palate, the attack is round for this lively wine, rich in spices. A citrus finish.
Food and wine pairing suggestions: Bouillabaisse, crayfish in broth, roast capon, turkey escalope with Roquefort.
The birdsong rings out like a signal to all at the first and last glimmers of day. It is life that awakens and then fades away, ceaselessly. Inspired by a poem by the iconic Max Rouquette, ‘Les oiseaux de l’aube’ (The Birds of Dawn) highlights the fragility of this song of the Earth, ever ready to fall silent like a stone at the bottom of the water. This cuvée captures that elusive Nature, immortalised at its finest, fresh and fleeting.
