Temperature / Cellaring: Best enjoyed young at 7–8°C; this wine can be cellared for one or two years.
Our tasting notes: Grey with pinkish highlights, this wine offers aromas of peach and citrus. Fresh on the palate with a mineral finish.
Food and wine pairing suggestions: Cod brandade. Tomato tart, turkey escalopes with Roquefort, roast capon, Asian cuisine.
Taken from the work of Max Rouquette (1908–2005), ‘Tout le sable de la mer’ reflects on the passing of time, for the richness of a moment lies in its transience, with a beginning and an end.
