Grape varieties: Grenache, Syrah and Mourvèdre (oak-aged).

Soil: Gravelly soil.

Temperature / Cellaring: Best enjoyed for its fruitiness within the first three years; this wine will reach its full potential after a few years in the cellar. Between 3 and 7 years.

Serving temperature: 16–18°C.

Our tasting notes: Deep purple colour. A powerful, distinguished nose with notes of black berries, leather, mocha and spices. A powerful yet round and refined palate with good length.

Food and wine pairing suggestions: A cassoulet, rabbit with olives or rougail. Red meats, game and stews in general.

Inspired by a poem by the iconic Max Rouquette, ‘Les oiseaux de l’aube’ (The Birds of Dawn) highlights the fragility of this song of the Earth, ever ready to fall silent like a stone at the bottom of the water. This cuvée captures that elusive Nature, immortalised at its finest, fresh and fleeting.
