A popular proverb says that ‘to live in Saint-Guilhem-le-Désert, you need a donkey’s back, a wolf’s teeth and a dog’s legs’, and goes on to say, ‘we have enough to eat what we have, and if anyone wants to come, let them break their legs on the way’. This saying has its roots in the poverty and frugality of the monastic diet of yesteryear in these arid regions. It was another way of saying that visitors were not really welcome because they were a financial burden, but above all that day-to-day survival was by no means easy and required special skills!
